Anybody out there remember a 1960s-1970s TV show called Bewitched? It was about a witch called Samantha who could twitch her nose and make magic things happen. So, I think I twitched my nose and five days went by… 🧙🏼♀️
Yesterday’s lunch was a fridge forage. Hellim (halloumi), salad stuff and figs, so this salad was the end result. Recipe & method:👇🏼👇🏼👇🏼
🥗 Ingredients for the figs:
1 tbls olive oil
4 tbls honey
2 tbls hot water
1 cinnamon stick
🥗 Method for the figs:
Halve the figs then mix the honey and water together and set to one side.
In a frying pan, add the olive oil and place the figs face down and fry for two minutes on a medium heat, then add the honey/water mixture in, cinnamon stick, gently flip the figs and fry for a further 2 minutes. Baste the figs frequently and then repeat the same process for another minute on both sides.
🥗 Ingredients for the couscous:
145 gms couscous
1 chicken stock cube
250 mls hot water
4 finely sliced spring onions
1/2 orange, yellow, red pepper diced
8 santini tomatoes quartered
2 beetroots diced
1/2 bag parsley finely chopped
1/2 cucumber diced
Juice of 1/2 lemon
Salt & Pepper to taste
Put the couscous in a bowl, mix the chicken stock cube with the hot water and pour over the couscous. Cover with cling film and leave for 20 minutes, then fluff it up with a fork.
Put all your diced, chopped salad stuff into a bowl, add your fluffed-up couscous, season and mix everything together.
Slice one block of hellim, and fry for a couple of minutes either side until browned.
Then assemble everything. Couscous salad, hellim and honey figs – and yum yum! 😋
