Busy couple of days deep-cleaning, tidying and sorting rather than cooking or baking.. dull though I find housework, it’s also rather satisfying at the end… I just prefer not to make a habit of it! 🤣

One of our favourite combos at home, although a bit on the expensive side as the boys can really munch through these kuzu pirzola (lamb cutlets), which is probably why I don’t make these frequently!

Cypriots will typically serve this with vermicelli rice, salad and yoghurt. We always eat these in our hands, it’s the only way to get to all the meat, and it’s lip-smacking good! 😋

To make for 5:

🥘 Ingredients:

35-40 lamb cutlets
1/2 cup Extra virgin olive oil + extra to cook with
Salt and pepper to taste
1 tbls Cinnamon
1 tsp Cumin

🥘 Method:

Mix all the ingredients together and then marinate the cutlets for as many hours as you can in the fridge. Adjust the quantities depending on how many cutlets you have, each cutlet should be coated in the marinade.

In a large deep baking dish, place your marinated cutlets and drizzle over with extra virgin olive oil and cover with foil.

Pop into the oven on 180 for around 45 minutes, then turn each of the cutlets over, remove the foil, and put back into the oven for a further 15-20 minutes until they are crispy and brown. Enjoy! 😋
