Chicken soup is good for the soul or so the saying goes.. It’s also good when you have a fridge full of fresh food but can’t be bothered to cook any of it, so you go the freezer instead! 🤣
This is a version (with spaghetti instead of rice) of what we call “hasta çorbası” and the literal translation is “sick soup”. 🤷🏻♀️ My Nene and mum used to make this (with rice) when we were kids and we make it for our kids.
I swear this soup does make you feel better even if you’re not under the weather! To make a batch: (timings are for frozen chicken thighs, please adjust for fresh):
4 chicken thighs with skin
2 chicken stock cubes
3-4 medium potatoes, peeled and cubed
6 pieces of spaghetti broken into approximately 1 inch pieces
Lemon juice to taste
Add two chicken stock cubes, chicken thighs and water to a saucepan and bring to a boil. Then simmer until the chicken is cooked, about 30-40 minutes.
Whilst that is bubbling away, peel and dice the spuds, and get the spaghetti ready.
Remove the chicken thighs but keep the water as that’s the best bit.
Peel the chicken and throw that back into the saucepan along with the potatoes and spaghetti and cook for a further 20 minutes or so on a medium to low heat.
Get your toast ready and serve up a big bowl of comfort food with lots of lemon squeezed on top 💕
