Ever since I made the Biscoff cheesecake, I had been itching to try out making cookies with the biscuits and the Biscoff crunchy spread. I used my usual cookie making method (less the chocolate chips) and then added ground Biscoff biscuits into the dough. After leaving the mixture in the fridge for a couple of hours, I rolled each cookie into a ball, made a hole and put half a teaspoon of Biscoff crunchy spread into the middle of the cookie, recovered it back into a ball and baked. Result, this oaty, crunchy, chewy, Biscoff-tasting cookie 🍪 😋 I hope everyone has a good Easter Sunday x
