Finally finished watching Sherlock with hubby, Lupin when I do the treadmill, and have now started How to Get Away with Murder (kids recommended), and so far, very good…! As long as it keeps me on the treadmill, then all the better!
I love the one pot dishes when there isn’t much to do, and I keep those for busy days. I usually make this Fırın Kebab (which just means cooked in the oven) with chicken thighs, but latterly, I have started making it with diced lamb. The recipe and method for the chicken version is on my grid. To make for 4-6:
1.5 kg diced lamb, fat removed
3-4 potatoes per person, peeled and quartered
1 finely diced onion
2 garlic cloves finely sliced
2 tins chopped tomatoes
1 tbls paprika paste
1 tsp cinnamon
1 tsp cumin
1 tsp garlic granules
1 tsp smoked paprika
2 bay leaves
Salt & Pepper to taste
With a glug of oil, brown off the diced lamb and set aside.
In a large dish, add the onions, garlic and tomatoes and mix it all together and spread out across the base of your tin.
Then add in the browned lamb, potatoes and all the spices, bay leaves and seasoning, and mix everything together.
Finally add a good glug of olive oil over your dish, add warm kettle water to three quarters of your dish, cover with foil, and pop into the oven on 180 for 1-1.5 hours. At the 45 minute point, I usually remove the foil to check on the water, turn the potatoes and wait for it to brown. Serve with vermicelli rice and salad 👌🏼
