Gorgeous day yesterday, with lots of opportunity to pop out into the back garden with a cup of tea and just enjoy the sun ☀️
This is one of the boy’s favourite meals, oven baked salmon with homemade garlic butter, new potatoes and veg. Perfect for this weather. Always lots of salmon, one never seems to be enough! feedingthefridgeraiders has shared my recipe a couple of times, but here it is in case you’ve missed it and fancy giving it a go!
6 salmon fillets
A good glug of olive oil
Garlic butter (generous knobs)
Salt & pepper to taste
Za’atar (generous sprinkling)
Juice of 1/2 lemon
You can either bake them in parchment paper or foil. I tend to double layer the foil in a large tray.
Put a glug of olive oil into the bottom of the tray, and then place the salmon skin-side up. Add salt, pepper and za’atar, and then flip them over and repeat the process.
Drizzle some olive oil over the salmon, and the lemon juice. Then slice up the lemon and scatter the pieces around the tray. Throw in some little tomatoes, dot the garlic butter (recipe & method on my grid) on top of the salmon and around the edges.
Pop into the oven on 180 for 30 minutes with the foil on, then uncover for 10 minutes to brown the top (we like it crispy 😋) Serve with whatever you like, we tend to have it with new potatoes and veg. Enjoy!
