Granted you cannot quite see the inside, but if you swipe 👉🏼 you can. The boys were starving when this came out of the oven, so it was a quick pic and then it was demolished! 🤣

This is the Cypriot version of Mac ‘n Cheese. The Turks call this Fırın Makarna. To make for 6:

🥘 Ingredients:

750 gms beef mince
1 finely chopped onion
2 finely sliced garlic cloves
500 gms penne pasta
Glug of olive oil
2 tsp cinnamon
3/4 tsp cumin
1 tsp garlic granules
1 packet chopped parsley
1 tbls tomato purée
Salt & Pepper to taste
2 chicken stock cubes
250 gms grated Hellim
250 gms grated cheddar
2 tbls dried mint

🥘 For the sauce:

300 ml double cream
300 ml semi-skimmed milk
50 gms butter
3 tbls plain flour
2 bay leaves
1/2 tsp ground mace
6-8 peppercorns
1 slice of red or white onion

🥘 Method:

Mix together the cheeses and dried mint and set to one side.

Olive oil into the pan and sauté the onions and garlic for 5-6 minutes.

Add in the mince, and once browned, add all the spices, parsley, purée, seasoning and fry until cooked through. Set to one side.

In boiling water, add the stock cubes and pasta. Boil until ready.

In a saucepan, add the cream, milk, peppercorns, mace, bay leaves, onion and gently simmer. Before it gets to a boil, remove and let it rest for 15 minutes. Sieve and set to one side.

Melt the butter and add the flour until you get a paste. Slowly add your milk and stir continuously. Once the sauce has thickened, stir in two handfuls of cheese.

Put a little olive oil into and around your dish, then a layer of cooked pasta, a layer of mince, a sprinkling of cheese, and repeat until you reach the top.

Pour over the top the sauce and then the remainder of the cheese. Bake in the oven on 180 for around 35-40 minutes.
