I had the vaccine on Tuesday and then side effects 😳 but all good today! ☺️

This roasted veg and dried fruit couscous was last night’s side dish to go with our main meal. There’s so much dried fruit and roasted veg in there, that it could easily have been a meal in itself if we weren’t all meat-eaters! 🤣

If you’re looking for a filling side-dish, I’d recommend this one! Serves 6-8:

🥗 Ingredients:

180 gms couscous
250 ml hot water
2 chicken stock cubes
Salt & Pepper to taste
Juice of 1/2 lemon

1 red bell pepper
1 courgette
1 aubergine
1 red onion
100 gms flaked almonds
200 gms mixed fruit with cranberries and apricots
1/2 bunch of parsley
2 tbls Extra virgin olive oil

🥗 Method

Line a tray with parchment paper and set to one side

Dice all the veg and put it in a bowl, add the olive oil and toss the vegetables in it until covered. Put onto the baking tray, spreading it out evenly. Pop into the oven on 180 for 30 minutes or until roasted to your taste. At intervals toss the veg to ensure it all gets roasted.

In the meantime, add the couscous and dried fruit to a large bowl

In a measuring jug, add 2 chicken stock cubes and 250 hot kettle water. Dissolve the stock cubes, and pour over the couscous, making sure it is fully covered. Wrap cling film over the bowl, and set timer for 20 minutes.

Add your flaked almonds to a hot frying pan, and toast for 5 minutes on a low-medium heat until brown

Remove cling film, and fluff up the couscous with a fork. Once the veg is sufficiently roasted, add to the bowl and mix it all together along with the toasted flaked almonds and chopped parsley. Season to taste and add the lemon juice, mix again. Keeps for 3 days in the fridge. Enjoy! 😋
