I heard on the news this morning that they might be extending lockdown in the UK by another three weeks… I might be the size of a house by then…! If you have any packs of sweet shortcut or puff pastry lying around and some jam, then this is a very easy and quick sugar fix..! Press the pastry into a tart tray – I used a 23” one – and trim off any excess pastry. Spread the jam across the base – depending on the size of your tin ofc, but I used around 300gms – with the left over pastry, roll up and using cookie cutters or just a knife, cut into shapes and put on top of your tart. Add egg wash onto the shapes and pop into the oven on 180 for 40 minutes. Dust the top with icing sugar, make a large cup of tea and dig in! 😋
