I know it’s frosty and cold out there, but despite that, I am craving Mediterranean food, and honestly, the Mediterranean sun as well 😢

We served it with a Cypriot potato and egg salad (post to ), new potatoes and other roasted veg that didn’t make it into the photo, as I forgot 🙄

To marinate (and extra for basting) for 5 large fillets:

🍣 Ingredients:

5 tbls dark soy sauce
5 tbls light brown sugar
5 tbls runny honey
5 tbls melted butter
5 tbls extra virgin olive oil
3 garlic cloves finely sliced
1 lemon sliced
2 red onions roughly chopped
1/2 red, orange and yellow peppers roughly chopped

🍣 Method:

Throw everything (except the salmon) into a large bowl and give it a good stir.

30 minutes before you are going to cook the salmon, cut it into chunks and put it into the bowl to marinate.

Thread red onion, peppers, salmon, then a slice of lemon onto your skewer. Repeat until you have used all the salmon.

I like my salmon slightly crispy, so I cooked it for 30 minutes (rotisserie grill) basting every 10 minutes, and it was delicious 😋 Equally you can do this under the grill (20 minutes) using the same method. Enjoy! 😍
