I suddenly had an urge for crispy aromatic duck, but Iโ€™d ordered chicken in my weekly shop, so here we have crispy aromatic chicken instead! ๐Ÿ˜‚

Not sure it has the same ring to it, but you know what, it tasted bloody lovely with half the faff of shredding duck! A quick order of special fried rice and crackers from dimtrestaurant (because lifeโ€™s too short and their rice is just fab!) via deliveroo and that was Friday night food sorted! ๐Ÿ˜‹

Serves 4:

๐Ÿ— Ingredients:

1 extra large chicken
1/4 cup light soy
2 tbls dark soy
3-4 cms of ginger, roughly cut
2 tbls olive oil
1 tbls Five Spice
2 tbls honey

๐Ÿ— Method

In a super sized ziplock add 1 teaspoon five spice (reserve the rest), the ginger, light and dark soy and olive oil.

Swish everything around and put the chicken in the bag, and pop it into the fridge for 3-4 hours.

30 minutes before you are going to cook the bird, remove (retaining all the juices except the ginger in the bag). Take the ginger and pop it into the cavity of the bird and place on a rack over a roasting tin. Use the remainder of the five spice and apply it all over the bird.

Pop into the oven on 160 for 90 minutes. As soon as the bird goes in, put the leftover juices into a small saucepan, add the honey and gently simmer for 5 minutes so that it thickens.

Then, every 20 minutes, baste the bird until itโ€™s cooked. Either make or buy your rice. Enjoy! ๐Ÿ˜‹
