Maybe not your traditional Sunday roast, but a change is good as a rest… even if you post it a couple of days late! 🙄

I used gordongram recipe for crispy aromatic duck, which we make a couple of times a year, and it never fails to turn out consistently yum and crispy every time. I never deviate from this recipe as it can be relied on to produce that crunch! 👌🏼

Hands up tho, we bought the egg fried and special fried rice, crackers and pancakes from dimtrestaurant in Whiteley because I love their fried rice in particular 😋

Gordon Ramsay’s recipe and method below. Super easy, give it a go. You just need to have the patience to wait 4 hours, but it’s worth it!

🦆 Ingredients for one duck:

4 tbsp Chinese 5 spice
4 star anise
2 garlic cloves smashed
4 cm root ginger, peeled and roughly sliced
4 spring onions, trimmed and cut in half
Salt & pepper

🦆 Method:

Preheat oven to 160

Cut off and discard the bum (he doesn’t say that, but make sure it’s cut off!)

Then discard the flap of fat that hangs over the entrance to the Duck’s cavity. Pat the duck dry inside and out with kitchen paper. Add salt, pepper and Chinese 5 spice and rub it in all over the duck including the crevices

Insert your star anise, spring onions, smashed garlic and root ginger into the cavity

Place the duck on a roasting rack over a tray and roast for one hour on 160 and then reduce to 140 for a further three hours. I rotate my ducks every hour. 😋
