Mediterranean chicken skillet meal, super easy to do and something a little different for my daughter’s lunch today 💕😊 Recipe: Brown the chicken in olive oil until it has a good colour. Remove and put to one side. Fry 1 onion and 3-4 garlic cloves in a little olive oil for around 8 minutes, then add in one tin of chopped tomatoes or 4 large fresh tomatoes. Fry for a further 5-6 minutes and put the chicken back into the skillet. Place skillet in the oven on 180 for 20 minutes or until you think the chicken is thoroughly cooked. Garnish with parsley, and olives if you like them. 🙏🏻
