Monday came and went in a blur of really dull life admin, but needs must when the devil drives..
I generally keep puff pastry at home, and yesterday was one of those days when it came in handy.
I had leftover cooked mince from the pasta bake, and I used the puff pastry to create a mid-morning snack. Went perfectly with a cuppa before I tackled more boring stuff 😭

1/ Slice puff pastry sheet into 6. Using a sharp knife draw a circle on each so that the puff pastry rises around where you have cut
2/ put 3 tsp of cooked mince or anything else you might have as leftovers into the circle
3/ egg wash all around and pop in the oven on 180 for about 25-30 minutes or until golden brown 😋
