My eldest son goes through phases with his food. He’s always done it, and the trick is to catch the moment when he transitions from one phase to the other and hope you don’t have a fridge full of stuff that he now “doesn’t fancy”! Thankfully this couscous has been top of his favourites for months now! 🤞🏼

It’s so versatile that it goes with almost anything that I make, so I always make a big dish. I’d say it has 4 generous servings. I recently added beetroot to it (and he didn’t like it) – kids eh?🤷🏻‍♀️

🥗 Ingredients:

145 gms couscous
1 chicken stock cube
250 mls hot water
4 finely sliced spring onions
1/2 orange, yellow, red pepper diced
Juice of 1/2 lemon
1/2 cucumber diced
1/2 pack parsley finely chopped
2 beetroot’s diced (optional)
8 santini tomatoes quartered
Salt & pepper to taste

Add the couscous to a large bowl. Dissolve one stock cube in hot water and pour over the couscous, cover with cling film and let it rest for 20 minutes. Use a fork to fluff up the couscous.

Add all of your chopped, diced, sliced salad stuff to a large bowl, add the couscous and mix everything together really well. Add your lemon juice and seasoning. Job done ✅
