My youngest son almost sabotaged last night’s dinner which was a one pot roast chicken and veg by cooking something else in the oven at the same time and turning the heat up and leaving it on (!) whilst I was at the dentist. I came back to a charred chicken! 🤦🏻‍♀️

This is a quick fix dish that you can make if that ever happens to you! Serves four:

🐔 Ingredients:

2 x chicken breast cooked
1 x mug of American long grain rice
1 x heaped mug of frozen veg
1 x ready cooked garlic & parsley king prawns
2 x chicken stock cubes
Glug of olive oil
3.5 mugs of cold water

🐔 Method:

Add a glug of oil into a large saucepan and fry the rice for 2-3 minutes on medium heat. Quickly add your cold water and stir.

Add in the chicken stock cubes, cooked prawns, chopped up chicken pieces and frozen veg and bring to the boil, stirring intermittently. Then simmer until there’s around 1/2 to 1 inch of juices left, then turn it off, add a tea-towel on top and let it rest and naturally soak up the remainder of the juices. Sprinkle some parsley on top. Enjoy 😋
