Pottering form of day checking out lunch after which dinner. In between the cooking, we have now just lately began to play Cluedo once more after a few years, oh the fun of lockdown..! It took me ages to get the grasp of working it out, duh 🙄

A very simple Mediterranean couscous salad for lunch with fried helim (Halloumi) and M&S’s caramelised crimson onion sausages on the facet 👌 I didn’t assume it wanted something to go along with it, however the children did, so serve with something you fancy..!

For 4:

🥗 Substances:

200 gms couscous
200 mls sizzling water
1 hen inventory dice
1 tbls olive oil
1 finely chopped crimson onion
1 finely diced tomato
1/four finely diced cucumber
half tin of chickpeas
half bunch finely chopped parsley
1 orange (or any color) bell pepper finely diced
half block of diced feta cheese
Juice of half lemon
Zout & Peper om te stylen

🥗 Methodology:

Dissolve the hen inventory dice in 200mls of sizzling water and pour over the couscous. Cowl with cling movie and depart for 10 minutes.

Within the meantime chop up your salad components and set to at least one facet. Fry or grill your sliced helim and set to at least one facet.

After 10 minutes take away the cling movie, and utilizing a fork, fluff up the couscous so there are not any clumps. Pour over 1 tbls of olive oil, combine collectively. Add in and blend collectively all of the salad components. Then salt & pepper & lemon to style.

Serve the salad with helim (or sausages or something you want!).
