What a superb day we had yesterday. Laborious graft within the kitchen and the backyard 🪴

Full leg of lamb roast, kleftiko type with all the normal (for us anyway) trimmings. Recipe and technique on my grid, however I’ve additionally popped it beneath: 👇🏼👇🏼👇🏼

🥘 Elementen:

Leg of lamb or lamb shanks
Een flinke scheut olijfolie
2 laurierblaadjes
1/2 pack parsley roughly chopped
1/2 pack rosemary
1 pink onion sliced
Sap van 1/2 citroen
5-6 garlic cloves bashed
Zout & peper om te stylen
Smoked paprika – massive handful

🥘 Methodologie:

Begin by prepping the baking tin with a layer of foil. Add a second layer of foil rotated 180 levels so that you’ve full protection

Add a very good glug of olive oil to the bottom of the foil, ed by half of the pink onion slices, the garlic, parsley and rosemary and set to at least one aspect

Get your lamb and pat it dry. Then add your salt, pepper and smoked paprika and rub it throughout into the pores and skin

I often then add a few slashes to the meat and stuff somewhat extra rosemary into it. Pop that on high of your tray, drizzle with olive oil, the lemon juice (then slice into quarters and throw into the tin), add just a few extra onion slices and parsley and seal it up.

Pop that into a big tray and add about 1 inch of boiled water across the foil and put into the oven on 180 for round 4+ hours. Prime up the water each hour. With 30 minutes to go, open up the foil and let the meat brown.

Serve with no matter your conventional sides are. Take pleasure in! 😋
