No frills, just good old-fashioned meat and two veg on a meatless Monday 🤦🏻♀️
Lamb chump steaks cooked on the griddle, some veg, duchess potatoes and gravy. Yum!
Marinated the lamb in my usual marinade:
1/2 cup of extra virgin olive oil
1/4 cup white wine vinegar
1 tbls dried oregano
1/4 tsp salt
Baste the lamb before you start, and then at 10 minute intervals, rotating frequently until cooked.
Duchess potatoes recipe from goodfoodau 👌🏼
850 gms Maris piper potatoes
60 ml double cream
2 tbls grated Parmesan
1/4 tsp ground nutmeg
1 egg yolk for glazing
Boil the potato for 10 minutes, until just tender. Drain, then return the potatoes to the pan over very low heat for 1–2 minutes to dry out the potato. Transfer to a bowl and mash well.
Beat together the eggs, cream, parmesan and nutmeg. Season well, then add to the potato and mash well. Cover and leave for 20 minutes. Preheat the oven to 180°C).
Put the just-warm potato mixture in a piping bag with a 1.5cm star nozzle. Pipe the mixture in swirls, not too close together, onto greased baking trays. Brush lightly all over with the extra egg yolk. Bake for 15–20 minutes, or until the potatoes are crisp and golden. 😋
