No major cooking yesterday for two reasons: (1) I was determined to finish watching discovery.of.witches; and (2), I had leftovers. So, this is just a really tasty and easy way to use leftover chicken from the roast we had on Saturday. That said, you can just eat this rice on its own but I’m feeding boys, so I need to bulk it up!

I usually make a version of this rice with liver (iç pilav) but as I only had chicken, I adapted some of the flavours. For four:

🍚 Ingredients:

Leftover cooked chicken (or any meat).
65 gms flaked almonds
125 gms walnuts broken into pieces
100 gms dried apricots chopped up
100 gms sultanas
55 gms butter
Glug of olive oil
1 finely diced onion
270 gms rice
2 chicken stock cubes
1/4 tsp cardamom
1/4 tsp cinnamon
Black pepper
2.5 mugs of hot water

🍚 Method:

Add a glug of olive oil and the butter into a large frying pan on medium heat. Once the butter has melted, add the diced onions and sauté for 5-6 minutes.

Reduce the heat to simmer, and add in the rice and the flaked almonds and fry together for around 7-8 minutes, stirring frequently.

Then add 2.5 mugs of hot water, 2 chicken stock cubes, cinnamon, cardamom and season with black pepper. No salt as you get that from the chicken stock cubes.

Pop the lid on and cook on simmer stirring intermittently for about 15 minutes. Remove from the heat and cover with a tea-towel under the lid. Let the rice rest for 10 minutes.

After 10 minutes add in your walnuts, sultanas, apricots and leftover chicken and mix gently. Serve when ready. Enjoy! 😋
