Pottering kind of day sorting out lunch and then dinner. In between the cooking, we have recently started to play Cluedo again after many years, oh the joys of lockdown..! It took me ages to get the hang of working it out, duh 🙄
A very easy Mediterranean couscous salad for lunch with fried helim (Halloumi) and M&S’s caramelised red onion sausages on the side 👌 I didn’t think it needed anything to go with it, but the kids did, so serve with anything you fancy..!
200 gms couscous
200 mls hot water
1 chicken stock cube
1 tbls olive oil
1 finely chopped red onion
1 finely diced tomato
1/4 finely diced cucumber
1/2 tin of chickpeas
1/2 bunch finely chopped parsley
1 orange (or any colour) bell pepper finely diced
1/2 block of diced feta cheese
Juice of 1/2 lemon
Salt & Pepper to taste
Dissolve the chicken stock cube in 200mls of hot water and pour over the couscous. Cover with cling film and leave for 10 minutes.
In the meantime chop up your salad ingredients and set to one side. Fry or grill your sliced helim and set to one side.
After 10 minutes remove the cling film, and using a fork, fluff up the couscous so there are no clumps. Pour over 1 tbls of olive oil, mix together. Add in and mix together all the salad ingredients. Then salt & pepper & lemon to taste.
Serve the salad with helim (or sausages or anything you like!).
