The new BBQ arrived yesterday, just in time for the UK weather to revert to type! πŸ˜‚

I did start off with more of these little cheese and bacon muffins, but I turned my back for literally a moment and eldest son swiped them just as I was about to take a pic! πŸ€¦πŸ»β€β™€οΈ

The boys love these fresh out of the oven, and I thought it would make perfect revision food for youngest son (who seems to eat nearly everything with ketchup!).

To make 18:

Ingredients:

230 gms plain flour
2 eggs whisked
600 mls milk
Pinch of salt
6 cooked bacon rashers
200 gms cheddar cheese grated

Method:

In a large bowl add the flour and salt and mix together. Make a well in the middle and add the eggs and half of the milk. Whisk until lumps are gone, then add remainder of the milk and whisk until smooth. Set to one side for 30 minutes.

In the meantime cook the bacon, and chop into small pieces. Grate the cheese, and oil the muffin tray.

After 30 minutes, add the bacon and cheese to the mix and stir thoroughly and put three heaped tbls into your heated muffin tray.

Pop into the oven for 30 minutes, rotating at the midpoint. Make tea and enjoy! πŸ˜‹
