There are days I work with dough when I think “it’s great!, I don’t know why I don’t do this more often”, and then there are days like yesterday when I thought “I f***ing hate this stuff! I don’t know why I use it!”

I don’t know what it was yesterday but I threw two attempts at making dough into the bin. One didn’t rise and one, well, let’s just not go there! So I reached for a puff pastry hack that I saw on twisted to save my sanity.

So easy, and much easier than the pattern implies at first glance. ‘How to’ pics 👉🏼👉🏼👉🏼 and the cheese I used was hellim (halloumi) with dried mint ofc 🤣 which was perfect for a mid-morning/tea-time snack. Peace was restored in our house.

Once you have rolled it up, grab a pastry brush and go over them with a beaten egg and pop into the oven on 180 for at least 40 minutes (it took longer to bake than normal due to the twists I suspect) rotating at the mid-way point. Once out of the oven, go over it with a little melted butter, make a cup of tea and enjoy! 😋
