This always takes me longer than I think it will, and I never learn! 🤦🏻♀️ That said, these cheesy bacon souffléd baked potatoes are well worth the effort! A bit of sour cream and chives dip on the side and job’s a good ‘un! 😋
4 large jacket potatoes
1 tbls olive oil
For the filling:
8 slices of cooked bacon diced
4 spring onions diced
2 eggs separated
200 gms cheddar cheese grated
4 tbls grated Parmesan
100 gms butter
Milk to preferred texture
Salt & pepper to taste
Rub a small amount of olive oil in the bottom of your tray and set to one side.
Prick the potatoes, rub them all over in olive oil and put into the tray. Pop into the oven on 180 for one hour.
Once cooked, slice them in half and carefully scoop out the potatoes without breaking the skin.
Mash the potatoes with butter and milk to your preferred mash consistency. Then add in the cheddar, egg yolk, spring onions, chopped bacon, seasoning and mix together really well.
Whisk the egg whites until stiff peaks form, then mix it into the potato combo thoroughly.
Refill the potato skins with the filling, sprinkle the Parmesan over the top, and pop back into the oven on 180 for 20 minutes. Enjoy! 😋
