Took a couple of days off from the kitchen which was quite nice actually. Got back into the swing of it yesterday though and made these tasty Hellimli (Halloumi) pides stuffed with grated hellim, spring onions, parsley, eggs, salt, pepper and pul biber. These are Turkish origin, and as many cultures and food are intertwined, the Greeks call them Peinirli I think, and they are like pizza boats. Perfect lunch/brunch and goes brilliantly with a cup of tea. Expect a meat version next and variations of the theme now I know the boys will eat them.. I’ll get the recipe up shortly.
