Trying to bring a little summer into our lives with so much awful weather recently… It’s been a while since I last made pavlova, and I always just use the recipe bbcgoodfood as it’s reliable! Their recipe is 👇🏼 although I never any recipe in its entirety, so these are the parts I used!

Jack, my eldest son and I had this last night whilst watching Season 2 of The Spanish Princess, hit the spot perfectly 👌🏼

I usually make smaller pavlova’s as not everyone likes the same fillings/toppings, and then keep them in airtight containers so everyone can have what they fancy. To serve 6-8:

🍰 Ingredients:

4 egg whites
250 gms caster sugar
1 tsp white wine vinegar
1 tsp cornflour
1 tsp vanilla extract

🍰 For the topping:

300 mls double cream
3 tbsp icing sugar
Fruit of your choice

🍰 Method:

Heat oven to 150/130 C fan

Using a pencil, mark out the circumference of a dinner plate (I used a saucer for individual pavlova’s) on parchment paper.

Whisk 4 egg whites until they form stiff peaks, then whisk in 250 gms caster sugar, 1 tbsp at a time, until the meringue looks glossy.

Whisk in the white wine vinegar, cornflour and extract.

Spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.

Bake for 1 hour, then turn off the heat and let the pavlova cool completely inside the oven (I usually leave it for 2 hours).

To make the cream, whisk together the double cream and icing sugar.

To decorate, place the pavlova on the plate, cream on top, then chopped fruit, then the next pavlova, and repeat the process. Equally you can just use one pavlova and save the other/s for later. Enjoy!😋
