This is a super easy, straightforward dish, no fuss, just hearty good Cypriot food. Tavuk ve domatesli pilav (chicken and tomato rice), otherwise known as ‘red rice’ in our house! To make:
2 chicken thighs per person
2 chicken stock cubes
1.5 cups American long grain rice
3 cups water
1 finely chopped onion
Glug of olive oil
1 tin chopped tomatoes
Start by boiling the chicken until cooked for around 35-40 minutes, remove and set to one side.
In a glug of olive oil, sauté the onions for 5-6 minutes, add the rice and fry for a few minutes more, then the tinned tomatoes, chicken stock cubes, and then the water, bring to the boil and simmer until the rice is cooked.
In the meantime, shallow fry the boiled chicken on medium heat for 8 minutes both sides until they are golden brown. Serve with salad, yoghurt, job done. Enjoy! 😋
