We had a shakshouka-type vibe going yesterday with this breakfast-come-brunch. Super tasty, and very easy to make. Happy Sunday’s 😋

🍳 Ingredients:

8 santini tomatoes
3 mushrooms sliced
1 tbls olive oil
2 handful of spinach
2 eggs
2 slices of sourdough toasted
1/2 Avocado
Juice of 1/4 lemon
Salt & pepper to taste

🍳 Method:

In a little olive oil fry the tomatoes for a few minutes and then add the mushrooms. After 3-4 minutes add the spinach and seasoning and cover to let the spinach wilt for a further 5 minutes.

In the meantime, mash the avocado, and season with lemon, salt & pepper. Mix it all together.

Add two eggs on top of the spinach, pop the lid back on and let it cook until the egg is done to your preferred consistency. Pop the toast on in the meantime.

Spread the avocado across the toast, and scoop the contents onto it and get ready to dig into your breakfast!😋
