Celebrating with salmon kebabs and couscous salad. I marinated the salmon and then cooked it in my questappliances rotisserie which the kids bought me. I’ve tried this gizmo with meat kebabs, chicken and now salmon, and the meat is so juicy each time! 😋 To marinate (and extra for basting) for 5 large fillets:
5 tbls dark soy sauce
5 tbls light brown sugar
5 tbls runny honey
5 tbls melted butter
5 tbls extra virgin olive oil
3 garlic cloves finely sliced
Large handful sesame seeds
2 lemons sliced
Throw everything (except the sesame seeds and salmon) into a large bowl and give it a good stir.
30 minutes before you are going to cook the salmon, cut it into chunks and put it into the bowl to marinate. In the meantime, slice your lemon and set to one side.
Thread one chunk of salmon, then a slice of lemon onto your skewer. Repeat until you have used all the salmon. Then sprinkle over the sesame seeds.
I like my salmon slightly crispy, so I cooked it for 30 minutes, basting every 10 minutes, and it was delicious 😋 Equally you can do this under the grill using the same method. Enjoy! 😍
