What a fabulous day we had yesterday. Hard graft in the kitchen and the garden 🪴

Full leg of lamb roast, kleftiko style with all the traditional (for us anyway) trimmings. Recipe and method on my grid, but I’ve also popped it below: 👇🏼👇🏼👇🏼

🥘 Ingredients:

Leg of lamb or lamb shanks
A good glug of olive oil
2 bay leaves
1/2 pack parsley roughly chopped
1/2 pack rosemary
1 red onion sliced
Juice of 1/2 lemon
5-6 garlic cloves bashed
Salt & pepper to taste
Smoked paprika – large handful

🥘 Method:

Start by prepping the baking tin with a layer of foil. Add a second layer of foil rotated 180 degrees so that you have full coverage

Add a good glug of olive oil to the base of the foil, ed by half of the red onion slices, the garlic, parsley and rosemary and set to one side

Get your lamb and pat it dry. Then add your salt, pepper and smoked paprika and rub it all over into the skin

I usually then add a couple of slashes to the meat and stuff a little more rosemary into it. Pop that on top of your tray, drizzle with olive oil, the lemon juice (then slice into quarters and throw into the tin), add a few more onion slices and parsley and seal it up.

Pop that into a large tray and add about 1 inch of boiled water around the foil and put into the oven on 180 for around 4+ hours. Top up the water every hour. With 30 minutes to go, open up the foil and let the meat brown.

Serve with whatever your traditional sides are. Enjoy! 😋
