What a groundhog week this has been. The days and weeks are all rolling into one, but you know it must be Easter soon as the eggs are out at the shops months in advance!

I had apples and blueberries at home. I usually only make apple crumble for my youngest, but it seemed a shame not to make one for me as well 😉 I love apple and blueberry crumble, and with ice cream, well… 👌🏼

🍮 Ingredients:

Inside the crumble:

150 gms blueberries
4 large Braeburn apples, peeled and diced
1/2 tsp cinnamon
1 heaped tbls flour
25 gms butter
2 tbls soft brown sugar

The crumble:

125 gms plain flour
75 gms caster sugar
75 gms butter, diced
1/2 tsp cinnamon

🍮 Method:

Put the flour, caster sugar and cinnamon into a bowl and mix together. Add the diced butter and mix together to form breadcrumbs, leave some clumps of butter. Set to one side.

In your baking dish, add the diced apples and blueberries, flour, cinnamon, soft brown sugar and diced butter and mix together.

Sprinkle the crumble over the fruit generously, shake and tap the dish, then pop into the oven on 180 for 35-40 minutes. Serve with ice cream or custard. Enjoy! 😋
