When you open the fridge after a weekend food rush and all you can see is veg! Roasted aubergines (eggplant) and courgettes spiced with za’atar, salt, pepper, cardamom and olive oil on top and popped into the oven for 40 minutes, then I made bulgur in tomatoes with yoghurt on the side 😋😋😋 So good I had it for lunch and dinner!
