Yesterday almost felt like a ‘normal’ day as in pre-Covid.. the kids did their own thing, we took the dog out and we all reconvened in the afternoon/evening for homemade pizza. It felt weird. Lol.
Anyway, enough of my musings, I went back through my favourite desserts and I have now included the recipe for this Cypriot chocolate marble cake. Recipe: 👇🏼👇🏼👇🏼
80 gms cocoa powder sifted
500 gms granulated sugar
80 mls hot water
400 gms plain flour sifted
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
250 ml extra virgin olive oil
235 ml semi-skimmed milk
Icing sugar to dust
Grease your Bundt tin with cooking spray and flour. Shake away the excess.
Combine the cocoa powder, 100 gms of the sugar and hot water and set to one side to cool
In another bowl, combine the flour, baking powder and salt and set to one side
In a large bowl, add your eggs 400 gms sugar, vanilla extract and whisk. Slowly add the olive oil whilst whisking. Then a bit at a time add the flour combo and whisk until combined. Add the milk slowly and continue to whisk until fully combined.
Add half of the batter to another bowl and set to one side. Put the remaining half into the Bundt tin and dollop across the top the cocoa mix, then add the remainder of the batter on top and level the surface. Pop into the oven on 180 for 45-50 minutes. Enjoy! 😋
