Yesterday was one of those days where I didn’t want to cook a big meal, but had to do something to eat. This is one of those dishes that you create and then fingers crossed it’s edible 😂 Thank goodness this one was, and jolly tasty it was too. I fried the rice with garlic infused olive oil first, then added in the water, two chicken stock cubes, toasted almond and pumpkin seeds with pomegranate, cranberries, raisins, sultanas, walnuts, roasted pine nuts and just because I can, diced fried helim (halloumi) bits in and on top of the rice! It was so good that it was the only thing I ate for lunch and dinner!
